Flavorful Salad That's Perfect for Summer

This is our family's summer staple. A salad made with tasty veggies.

Ingredients: 2 servings

Eggplant (slim Japanese type)

Okra

Myoga ginger
2-3 pieces
Ginger
1 piece
Shiso leaves
10 leaves
Salt
to taste
Soy sauce
1 tablespoon
Bonito flakes

Steps

1. Slice the eggplant lengthwise, then thinly slice. Sprinkle with salt and let sit for 10 minutes before rinsing and draining.
2. Put the okra in boiling water to quickly cook, then thinly slice. Cut the myoga, ginger, and shiso leaves into strips.
3. Combine everything in a bowl, then dress with soy sauce and bonito flakes. Arrange on a plate and enjoy.
