Eggplant Salad with Spicy Dressing

The eggplants are the dressing in this salad! I fried them in delicious olive oil until they were crispy, with a spicy flavor. Please enjoy with lots of vegetables.

Ingredients: 3-4 servings

Eggplant (slim Japanese type)
Extra virgin olive oil
as needed
● Soy sauce
1 tablespoon
● Vinegar
1 tablespoon
● Mirin
1 tablespoon
● Doubanjiang
1 teaspoon (or to taste)
● Grated garlic
a small amount
● Salt
a small amount
● Pepper
a small amount
2-3 leaves
Daikon radish sprouts
1 bunch
Red onion (or regular onion)
1/4 large
Toasted sesame seeds
to taste


1. Combine the ● ingredients - vinegar, mirin, doubanjiang, grated garlic, salt and pepper.
2. Take the blossom ends off the eggplant, peel strips off the skin randomly, and slice into 1 cm wide rounds.
3. Pour about 1 to 2 cm of olive oil in a frying pan over medium heat, and fry the eggplant.
4. Drain the eggplant well, and add to the combined ingredients from Step 1 and mix.
5. Wash the lettuce and dry them off, and rip up into easy to eat pieces. Cut the radish sprounts, wash and dry. Slice the red onion thinly.
6. Put the salad ingredients onto a serving platter, pour the eggplant and sauce over, and sprinkle with sesame seeds. The sauce is also delicious served over tofu or somen noodles!

Story Behind this Recipe

I wanted to come up with a fried recipe using olive oil since I bought a big bottle. My family loves eggplant, so I tried using that.
