My Grandmother's Salt Rubbed Cucumber

Prep your cucumbers with a salt rub -- they'll be light and perfect for the summer!


Cucumbers (large)
2 tablespoons
3 tablespoons
Grain vinegar
5 tablespoons
Ground white sesame seeds
3 tablespoons


1. Randomly peel the cucumbers (since the skin is tough).
2. Cut the cucumbers in half lengthwise, and scoop out the seeds with a spoon.
3. Slice the cucumbers, put into a bowl, sprinkle with salt and toss.
4. After about 15 minutes when the cucumbers have wilted, squeeze out twice to remove the water.
5. Add the sugar and vinegar to the squeezed out cucumbers. Taste, and add more salt if needed. Sprinkle with the sesame seeds and mix to finish.

Story Behind this Recipe

My grandmother and mother used to prepare this whenever they had a bountiful harvest of cucumbers in their garden and had to use them up. Now I do as well.
