Scrambed Eggs with Colourful Vegetables and Tuna

This is an easy dish where you just cook fresh vegetables and tuna together with eggs.

Ingredients: 2 to 4 servings

Cherry tomatoes
Snap peas
5 to 6
Canned tuna and canned sweet corn
1 can of tuna (with 2 tablespoons of sweet corn added)
Grated cheese
1 tablespoon
Salt and pepper
To taste
Butter (or margarine)
To taste


1. Take off the blossom ends from the cherry tomatoes and cut in half. Remove the stem end and string from the snap peas and cut in half.
2. Beat the egg lightly and mix in the vegetables, tuna can (with the brine), sweet corn (drained), grated cheese, salt and pepper.
3. Melt the butter in a heated frying pan and pour in the contents of the bowl. Stir in from the edge of the pan. Once it is cooked to your liking, stop the heat.
4. Transfer to a serving dish. Add garnishes such as lettuce (not included in the recipe) to your liking.
