Chicken Breast and Mizuna Green Salad with Umeboshi, Mayonnaise, and Wasabi

The Umeboshi dressing will increase your appetite even during the hot summer months!

Ingredients: 2 servings, as shown in the picture

Chicken breast
1/2 cut
Mizuna greens
2 bunches
Onion
1/4
Tomato
1/2
Umeboshi mayonnaise wasabi dressing
※Mayonnaise
3 tablespoons
※Wasabi
1/2 teaspoon
※Soy sauce
1 teaspoon
※Honey
1 teaspoon
※Lemon juice
1 teaspoon
※Umeboshi
1 plus
※Ground sesame seeds
1 tablespoon plus

Steps

1. Boil the chicken breast. I recommend "Moist Boiled Chicken" (Recipe ID: 580163).
2. Cut the mizuna greens and tomato into bite-sized pieces. Slice the onion (and soak in water).
3. Finely chop the umeboshi pickled plum. Mix the ※ ingredients to prepare the dressing.
4. Serve the well drained vegetables on a plate, place on the shredded chicken, and pour the umeboshi mayonnaise wasabi dressing on top, then you're done.

I saw "Moist Boiled Chicken" (Recipe ID: 580163) listed as one of the top recipes on COOKPAD, and it caught my eye.
I tried it with the chicken breasts I had in my fridge, and it became an instant favorite. I turned it into a salad using a dressing made with umeboshi pickled plum.
