[Prep] Sift the dry ingredients beforehand. Bring the eggs and margarine to room temperature. Preheat the oven to 180°C.
[Prep] Mash the banana with a masher or fork.
Add the warmed margarine to the soft brown sugar and mix until the mixture turns white.
Add the eggs one at a time and mix well after each addition.
Add the sifted dry ingredients to the mixture and mix until there are no lumps.
This is how it should look when you finish mixing.
Add the banana from Step 2 and mix well again. There should be a few small lumps left.
Pour into the muffin or paper cups and bake for 15 minutes in a preheated oven.
I baked these in brioche moulds and topped them with chocolate. They look really cute and makes good presents.
Story Behind this Recipe
Baking with pancake mix is easy but if you leave them for a while, they just start to taste of pancake. I wanted to make muffins that taste like those you would buy in a bakery and after much trial and error, I finally got the recipe! Even if you leave them for a while, they'll still be delicious and if you warm them they'll be nice and fluffy and even better!
