Cream Cheese and Onion Potato Salad

A simple potato salad with fluffy potatoes, onion and cream cheese.

Ingredients: 4 servings

2 medium
Cream cheese
40 g
Soup stock granules
1/2 teaspoon
A pinch
Dried basil or parsley
1/2 teaspoon
Balsamic vinegar
to taste


1. Slice the onion thinly, and microwave for 2 minutes at 600 W. Wash the potatoes, and microwave with the peel still on until tender.
2. Mix the onion and cream cheese together. Add the peeled potatoes, and mix trying not to crush the potatoes too much.
3. Add the soup stock granules, salt, basil or parsley while the potatoes are still hot and mix. When it's cooled down a bit, chill in the refrigerator.
4. Transfer to serving plates, sprinkle with some balsamic vinegar to taste and enjoy.
