Fluffy Soufflé Cups with 1 Egg

You can make this easy, cute, fluffy, and airy soufflé cups with only a single egg! Enjoy this fluffy and plump soufflé while it's still hot.

Ingredients: for 2 ramekins

Egg yolk
1 tablespoon
Cake flour
1 heaped tablespoon
50 ml
Vanilla extract
a small amount
☆ Egg white
☆ Sugar
1 tablespoon


1. Separate the egg yolk and egg white. Preheat the oven to 190℃.
2. Combine the egg yolk and sugar in a bowl. Mix with a whisk. Scoop 1 tablespoon of milk from the listed amount and add into the bowl. Mix well.
3. Add the cake flour and mix well. Mix in the rest of the milk, and add a few drops of vanilla extract.
4. Whisk the egg white lightly in a separate bowl. Add the sugar, and whip with a handheld mixer into a stiff meringue.
5. Add 1/3 of the meringue into the bowl from Step 3. Whisk until even and smooth. Switch to a rubber spatula and lightly fold in the rest of the meringue.
6. Pour the batter into the ramekins and bake for 10 minutes at 180℃.
