Add the margarine and sugar into a bowl, and mix with a spatula. Mix with the bananas while mashing. Add the pancake mix and egg, then mix some more.
Pour the batter into aluminium cups, and bake in the oven preheated to 180℃ for about 20 ~ 25 minutes, then they're done.
I substituted the egg with 50 g of milk for my daughter who has egg allergies. They became slightly dense and chewy.
Story Behind this Recipe
I created this recipe to rescue ripe bananas.
You don't need to mash the bananas completely. Fill the aluminium cups with the batter to about 60 ~ 70% full. (If you fill them too much, it will overflow.) Adjust the amount of sugar depending on the sweetness of the bananas.
