Bell Pepper and Potato Stir-fry with Whole Grain Mustard

You can enjoy the natural sweetness of the ingredients in this quick stir-fried dish with simple seasonings.

Ingredients: 2-4 servings

1 large
Red pepper
1/2 pepper
Yellow bell pepper
1/2 pepper
1/4 teaspoon
Whole grain mustard
2 teaspoons
Olive oil (or vegetable oil)
as needed


1. Peel and julienne the potato. Let it soak for over 5 minutes, then drain in a sieve.
2. Slice the bell peppers into 5 mm widths.
3. Heat some olive oil in a frying pan and stir-fry the potato over medium heat.
4. When the potato becomes transparent, add the bell peppers, and stir-fry for 1-2 minutes. Season with the salt and mustard, and remove from heat.
5. Transfer to a serving plate. Top with Italian parsley (not listed) if you have any.

Story Behind this Recipe

I got some cheap bell peppers at the supermarket. I like eating them raw, but my kids are not so keen on them, so I came up with this quick stir-fry so that my kids could enjoy them, too.
