Shiso Sandwiched in Pan-Fried Chicken

A simple recipe.


Chicken thighs
200 g
Shiso leaves
3 leaves
Soy sauce
1 tablespoon
1 tablespoon
1 tablespoon


1. Cut 3 vertical slices into the chicken. (Cut as deep as possible without cutting through to the skin). Julienne the shiso leaves.
2. Stuff the shiso leaves into the cuts in the chicken. Marinate in sake, soy sauce, and mirin.
3. Heat a frying pan and pan-fry the chicken with the skin side up on high heat until browned. Lower the heat to low and add a little bit of water. Cover with a lid and steam fry.
4. Flip over the chicken so that the skin is thoroughly fried. Coat the chicken with the marinade from Step 2.

I was planning to make pan-fried chicken rolls but this was easier to make.
