Lazy Rice Porridge with Nissin Chicken Ramen

Lazy Rice Porridge with Nissin Chicken Ramen

So you don't have dashi soup stock, mentsuyu noodle dipping sauce, or even the broth from a hot pot?
Well, that's when you use Nissin Chicken Ramen.

Ingredients: 1 to 2 servings

Instant ramen (chicken)
1/2 package
Plain cooked rice
1 heaping bowlful
Water
400 ml
Egg
1
Green onions
2-3 stalks
Soy sauce
1 teaspoon (or more to taste)

Steps

1. Before taking the Chicken Ramen out from the package, break in half and crush roughly.
2. Bring water to a boil in a clay pot. Add rice. After the rice loosens up, add Chicken Ramen and simmer for 2-3 minutes. Don't stir too much!
3. Add soy sauce and stir. Also add eggs (beaten or unbeaten) and turn the heat off. Scatter green onions and cover the pot. Serve directly from the pot.
4. When the eggs are slightly hard-set, it's ready to eat.

Story Behind this Recipe

I don't feel like cooking anything! But I feel too guilty to serve Chicken Ramen as is… How about as rice porridge? But there's no dashi soup stock or leftovers from a hot pot!
That's when I came up with this easy and quick recipe.
I often serve this for a late breakfast during the weekends.
