Grilled Spring Cabbage with Anchovy Sauce

Ingredients: 2 servings

Spring cabbage
Salt and pepper
To taste
Olive oil
1 tablespoon
50 ml
For the anchovy sauce:
・Anchovy paste
1 teaspoon
・Olive oil
1 tablespoon


1. Turn the cabbage upside down, cut into wedges avoiding the core. Chop half of the cabbage into four wedges. Season the cross section with salt and pepper.
2. Heat olive oil in a frying pan and brown both sides of the wedges. Flip over, add 50ml of water, and cover the pan. Steam over medium high heat for about 3 minutes.
3. Combine the anchovy paste and olive oil for the anchovy sauce. Plate the cabbage wedges and serve with anchovy sauce. Finished!

Story Behind this Recipe

I had a spring cabbage mimosa salad at my parent's place.
The grilled cabbage was so sweet and was delicious on its own.
So I served it with the salty flavors of anchovies in a bagna cauda style.
