The Easiest Chocolate Cupcakes

You don't need to sift the dry ingredients. All you need to do is mix. It doesn't even take 10 minutes to prep before you pop it in the oven! But the chocolate is rich, moist, and very delicious.

Ingredients: 9 mini cupcake liners

Chocolate bar
1 (55-60 g)
Margarine (or butter)
45 g (3.5 tablespoons)
25 g (3 scant tablespoons)
Cocoa powder
10 g (1.5 tablespoons)
Cake flour
25 g (3 tablespoons)
Baking powder
2 g (1/2 teaspoon)
Powdered sugar to finish (if you like)

1. Add cake flour and baking powder into a plastic bag, and shake.
2. Place the margarine and broken chocolate pieces in a heatproof bowl, and microwave until the margarine has melted. Mix and melt the chocolate.
3. Add the sugar and cocoa powder into the bowl, and mix well with a whisk. Break in the egg, and mix until the mixture becomes smooth.
4. Add Step 1, and mix until the mixture is no longer floury.
5. Fill the cups with the batter about 60% full, and bake in the oven preheated to 170°C for 18 minutes. Insert a toothpick through the cupcakes and if it comes out clean, it's done.
