This ratatouille only uses vegetables, but it's so good that you won't be able to stop eating!
You can make this with summer vegetables and mixed vegetables. Serve warm or chilled.

Ingredients: 5 servings

1/2 large
1 medium
1/2 medium
1 medium
Eggplant - small Japanese type
1 medium
Green peppers
1 medium
Other vegetables of your choice
to taste
Garlic (finely chopped)
1 clove
Tomato juice or tomato puree
about 200 ml
Salt and pepper
to taste
Red chili pepper
to taste
Olive oil
2 to 3 tablespoons


1. Cut all the vegetables into same-sized cubes.
2. Put a generous amount of olive oil (2-3 tablespoons) in a frying pan. Add the garlic and red chili pepper and fry until the flavours develop.
3. Start frying the vegetables, starting with the firm ones and adding the softer ones as you go.
4. When they are mostly cooked through, season with salt and pepper.
5. Add the tomato juice or tomato puree and simmer. Simmer over a low heat until there is not much liquid left in the pan.
6. It's done!! It's easy but delicious . Serve it on a piece of baguette. Bon Appétit!!
7. If you want to sweeten it, add ketchup or Worcestershire-type sauce to taste!
