Let's Learn to Handle Fish!  Grilled Turban Snails: IH Range Edition

You don't need an open flame.
You can make grilled turban snails with just an electric burner.

Ingredients

Turban snails (sazae)
As many as you like
Dashi stock
200 ml
☆Soy sauce
50 ml
Mirin
25 ml
Sake
10 ml

Steps

1. Remove the meat like in the sashimi edition. ♫ Remove the guts as well. Mix all of the ☆ broth ingredients together.
2. Finely cut the snails and return them to their shells. Put the guts in too!
3. Add the broth from Step 1 into the snails. (There is no need to warm up the broth beforehand!)
4. My family has an electric burner, so I cover a deep non-stick pan with aluminum foil, and line them up.
5. Cover with a lid and cook over medium heat (electric burner level 5) for 12-15 minutes.
6. Warm it up until the broth starts to gently bubble.
7. Mince some mitsuba clover if you have it for a nice touch.

Story Behind this Recipe

This is great with just a squirt of soy sauce and nothing else, but it's also nice to have it with soy sauce and broth too.
