Strawberry and Cream Cheese Ice Cream

Easy ice cream made using using leftover ingredients. It's like a rich no-bake cheesecake.


Cream cheese
100 g
Heavy cream
100 ml
2 tablespoons
Lemon juice
1 tablespoon
Strawberry jam
60 g


1. Soften the cream cheese in the microwave and mix until it becomes creamy. Add the lemon juice and jam, and mix.
2. Add 2 tablespoons of sugar to the heavy cream and whip until soft peaks form (it should fall back into itself when dropped from a whisk).
3. Mix with the cream cheese and pour into a small tray lined with cling film. Chill in the freezer until hardened.
4. Cut into small cubes and serve.

Story Behind this Recipe

I thought of making this when I had leftover cream cheese and cream from making cheesecake. I saw this in a cook book and I modified it to make it even easier to make.
