Wash and drain the bean sprouts. Slice the onion thinly.
Heat sesame oil in a frying pan and stir-fry the onion. When it has turned translucent, add the bean sprouts and stir-fry quickly. It tastes better with lots of pepper.
Add the ● ingredients and simmer for 2 to 3 minutes. If any scum rises, skim it off. Taste, and add salt to taste. Serve.
The main photo shows a deluxe version. When I add menma (preserved bamboo shoot) and nori seaweed, it makes me so happy.
Story Behind this Recipe
I love the bean sprouts in ramen. I wanted to just eat the bean sprouts.
You can change the bean sprout and onion amounts to taste. If you put in less, you can just call it miso soup, and if you add a lot you can enjoy it as a main dish. If you don't have Wei-pa, just use a generic Chinese soup stock. But Wei-pa tastes much better!
