Cozy Kabocha Squash Cream Au Gratin

The warm and fluffy kabocha and miso-flavored bechamel sauce really go well together! Made easy with a microwave! Bake with heaps of cheese.

Ingredients: Serves 4 (4 Cocottes)

Kabocha squash
300 g
20 g
20 g
200 ml
White miso
1 teaspoon
To taste
Melting cheese
As needed


1. Put butter in a large heatproof bowl and melt by microwaving. Combine flour and mix well.
2. Add milk to bowl from step 1 in small batches. When all the milk is combined, microwave for about 1 minute, mixing occasionally.
3. When it's thick, season with miso and pepper.
4. Slice kabocha into 5 mm pieces. Slice the onion.
5. Put the kabocha and onion into a heatproof container, cover with plastic wrap and microwave for 5 minutes. It's done when the kabocha is softened.
6. Combine condiments from step 3 with kabocha from step 5.
7. Put into a cocotte and top with cheese. Bake in 180℃ oven for 10 minutes.
