You can use this yeast made from home-grown germinated brown rice for making things such as macrobiotic bread, living culture yogurt and cheese.

Ingredients: An easy-to-make amount

Germinated brown rice (moistened)
50 g
Mineral water (or filtered water)
200 ml

Steps

1. Pulse all ingredients in a mixer. Pour the mixed ingredients in a clean container with a cover, place the cover on loosely and let the container sit in a not too warm place. Stir the mixture few times a day.
2. During the cold seasons or at night time when the temperature drops, it will ferment faster if you use the bread machine proofing system and maintain an even temperature.
3. How long it takes to make the yeast depends on the temperature, but when you can see small bubbles forming when the mixture is held still, then it is ready.
4. It takes 2 to 3 days when it is warm and about 5 days to ferment. Adding 1 tablespoon of sugar accelerates the fermenting.
