Carrot Tofu Salad (Shira-ae) Macrobiotic Recipe

This is a raw food dish. Eating raw carrots gives you vitamin C, and ascorbic acid.
Peanut butter adds richness to the dish.

Ingredients

Carrot
1 (medium)
Firm tofu
100 g
Unsalted peanut butter
2 tablespoons
Salt (for scrubing the carrot)
as needed
Salt
1/2 teaspoon plus
Vinegar
1/2 tablespoon

Steps

1. Julienne the carrot and lightly scrub with salt. Squeeze out the excess water, and sprinkle with vinegar.
2. Mix the lightly drained tofu, peanut butter, and salt in a bowl.
3. Add the carrot into the Step 2 bowl, mix well, and done.
