Shrimp Ball Clear Soup

It's a clear soup with pastel pink shrimp balls. It's so soft and tasty.

Ingredients: 4 servings

shrimp (de-shelled)
200 g
●Egg white
●Ginger juice
To taste
● Sake
1/2 teaspoon
● Salt (natural)
A pinch
△ Dashi stock
800 ml
△ Sake
2 tablespoons
△ Usukuchi soy sauce
2 teaspoons
△ Salt (natural)
1/2 teaspoon
Leaf garnish such as mitsuba
as needed


1. De-vein the shrimp and chop roughly. Then knead until it clumps into a paste.
2. Add ● marked ingredients to the shrimp and mix well.
3. Boil △ ingredients in a pot. Divide the shrimp into 8 equal portions and drop into the pot using a spoon. Once they start to float, cook for a few more minutes.
4. Add to a bowl and garnish with green vegetables such as mitsuba or boiled nanohana (rape blossoms) The one in the picture has plum flower shaped dried wheat gluten.

My father, who was a great cook used to make this when my mother was hospitalized.
