Slice the sponge cake into 3 pieces. Cut one slice in half. Thoroughly whip the heavy cream.
Coat the round slices of the sponge cake with heavy cream, and sandwich in sliced strawberries. Stick the half-circle cake slices together in the same manner, and stack together as shown in the photo.
Coat the cake with heavy cream. Add food coloring dissolved in a small amount of water along with a bit of matcha worked into hot water into the remaining heavy cream separately.
Place step 3 into a pastry bag, and decorate as you like.
This is a 3-tiered version. Slice into 2 slices, cut the top slice at the 1/3 diameter mark, and stack it together.

I wanted to make a tiered doll display cake for Girl's Day.
I recommend using non-dairy and dairy heavy cream with a 1:1 ratio. Add in vanilla extract, etc., if you like.
