Super Easy Macrobiotic Lemon Pudding

I recreated a delicious lemon pudding that I tried at a macrobiotic cafe!
It's so easy to make using soy milk, amazake, and kudzu powder. Please give its natural sweetness a try.

Ingredients: Four 9-cm diameter cocottes

Kudzu powder
2 tablespoons (to be dissolved in the 4 tablespoons of water listed)
4 tablespoons
160 ml
Soy milk
300 ml
Lemon juice
1 tablespoon


1. Dissolve the kudzu powder in the water.
2. Combine all of the ingredients in a bowl, then blend with a whisk (or, even better, process them in a blender.)
3. Put the mixture from Step 2 in a mold, pour 2 cups of water onto a baking tray, then bake for 30 minutes in an oven set to 160℃.
4. When it cools, chill in the refrigerator. I recommend serving it well chilled. You could also serve it with maple syrup on top.

When I went to a macrobiotic café recently, I had a super delicious lemon pudding. The pâtissier told me how to make it when I asked, so I created my own version. It's so easy! While it's a healthy dessert, you'll gobble it right down, so be careful.
