Snap Peas with Umeboshi & Mayonnaise

The combination of snap peas with this ume-mayo sauce is fantastic. It's a simple, but tasty dish.

Ingredients: 2-3 servings

Snap peas
1 pack
Umeboshi
1 (large)
Mayonnaise
1 tablespoon
Rice vinegar
1 tablespoon
Bonito flakes
to taste

Steps

1. Trim off the ends of the snap peas and parboil in salted water. Blanch in cold water, then drain. Remove the pit from the umeboshi and then mince it with a kitchen knife.
2. Put the ingredients from Step 1 and the rice vinegar into a bowl and mix everything together. Serve in a dish and top with bonito flakes.
