Okara Muffin with Banana and Yogurt

This is an okara muffin recipe with yogurt, which adds sourness to the muffin and banana. There's no need for oil, so it's healthy. These are moist and chewy muffins.


80 g
70 ~ 80 g
Fresh okara
80 g
Cake flour
80 g
1 medium
Lemon juice
1 tablespoon
to taste
Baking soda
1/4 teaspoon
Baking powder
1 teaspoon


1. Add the yogurt to the sugar, and mix until smooth.
2. Add the beaten egg, and mix some more.
3. Make banana paste or mash it with a fork in a separate bowl. Add the lemon juice, and mix. Add the okara, and mix well. Add this mixture to Step 2, and mix well.
4. Sift the cake flour, baking soda, and baking powder. Add cinnamon, and mix with Step 3.
5. Pour the batter into muffin cups, and tap on the counter to remove air. Bake for 20 minutes in the preheated oven at 180℃/350℉.
6. When cooled, if you don't plan to eat right away, put them in a plastic bag. They are moist and chewy muffins.
