Budget-Friendly Japanese Leek Hot Pot

This is a great dish to have at home right before a pay day when your budget is tight.

Ingredients: 2 servings

Japanese leeks
●Ground chicken breast
200 g
● Ginger
1-2 cm piece
● Egg
● Chicken cartilage
50 g
● Salt and pepper
To taste
● Katakuriko
1 tablespoon
1 L
☆ Chinese Chicken stock powder
2 tablespoons
☆ Salt and pepper
To taste
☆ Ginger
1-2 cm piece
☆Red chili peppers


1. Add the ● marked ingredients into a food processor and process until fully combined.
2. Thinly slice the Japanese leeks diagonally.
3. Add ☆ marked ingredients in a hot pot and bring to a boil.
4. When boiling, shape the chicken mixture from Step 1 into small balls add to the pot.
5. When the balls start to float, add the Japanese leeks! Cover with a lid and cook until the leeks are very soft.
6. Enjoy with ponzu sauce. Add ra-yu (hot sesame oil) if you'd like.

My mom used to make napa cabbage hot pots. I used Japanese leeks instead of napa cabbage here.
