Soy Milk Mayonnaise

I was able to make this macrobiotic mayonnaise by substituting lemon juice with mild tasting vinegar. This particular kind of vinegar is amazing with absolutely anything.

Ingredients: 1 serving

Soy milk
1/2 cup
Mild rice vinegar
1/5 teaspoon
2 pinches


1. Mix the soy milk with vinegar and mix.
2. Strain it through a coffee filter (for about an hour).
3. Mix the salt into the strained cream to finish.

Story Behind this Recipe

This mixture becomes sour cream if you use lemon juice instead of vinegar. I was inspired to see what will happen if I used mild rice vinegar.
