Soy Milk Miso Soup with Cabbage

Savory the mildness from the soy milk and the crunchy texture of cabbage. It'll warm you up on cold mornings.

Ingredients: 4 servings

Dashi stock (bonito and konbu based)
3 cups - 600 ml
Firm tofu (cut into 2 cm cubes)
Soy milk
200 ml
2 leaves
3 tablespoons
White sesame seeds
as needed


1. Put the firm tofu and soy milk into the pot of boiling dashi stock. Processed soy milk has sweetness that makes the soup mild.
2. Once the pot comes to a boil, add the sliced cabbage and the dissolved miso in the pot. Turn off the heat once the pot boils or else the soy milk will separate.
3. Serve the soup in bowls and sprinkle with ground or whole sesame seeds.
