Pan Fried, Shiso Flavored Sandwiched Lotus Root

This is a standard recipe, but I like to make it with shiso leaves and give it a miso flavor. Enjoy with refreshing ponzu sauce.

Ingredients: 2 to 3 servings

Lotus root
a piece about 15 to 20 cm long
Ground pork
150 g~200 g
Japanese leek
the white part (50 to 80 g)
Shiso leaves
10 leaves
1 tablespoon
1 tablespoon
1 tablespoon
2 teaspoons
Sesame oil
As needed
Ponzu etc.
to taste


1. Peel the lotus root, cut into 7 mm slices, and soak in a bowl of water with vinegar.
2. Finely chop the leek and shiso leaves. Combine with the ground pork and the ● ingredients and mix well.
3. Dry the lotus root slices well, and sandwich the meat mixture between two slices.
4. Put a generous amount of sesame oil in a pan, and pan fry the lotus root sandwiches over low heat for 5 minutes on each side, until golden brown. They burn easily, so watch carefully!!
5. I recommend using ponzu sauce as a dipping sauce. Or you can use ponzu sauce + ground sesame seeds, ponzu sauce + mayonnaise and Japanese style Worcestershire sauce.
