My Grandma's Kimpira Stir-fry

Ingredients

Burdock root
1.5 stalks
Carrot

Sugar (or beet sugar)
2 tablespoons
Soy sauce
1 1/2 tablespoons
Mirin
1/2 tablespoon
Sesame oil, Vegetable oil
as needed
to taste
Ichimi red chili pepper powder
A pinch
Sesame seeds
A pinch

Steps

1. Julienne the burdock roots and carrots.
2. Heat sesame or vegetable oil in a frying pan, and stir-fry the burdock and carrot. Coat the vegetables well in the oil.
3. Next, season with sugar and continue stir-frying. It's necessary to sweeten the stir-fry. Continue until the vegetables have heated through.
4. Afterward, season with soy sauce and mirin, and stir-fry until the liquid has evaporated. Done.
5. Try it with lotus roots.
