Yum Woon Sen (Thai Cellophane Noodle Salad)

This Thai bean salad is moderately spicy and tangy. As the ground pork in simmered, it's healthy. If you are not fond of cilantro, substitute with celery leaves isntead.

Ingredients: 2 servings

Cellophane noodles
40 g
Ground pork
50 g
Peeled shrimp
8 counts
Cucumber

Celery

Dried wood ear mushrooms

Yellow bell pepper

Red onion

Grated garlic

Chili pepper (sliced)

Lemon juice

Fish sauce
2 tablespoons

1 teaspoon

Steps

1. Julienne or thinly slice the vegetables. Rehydrate the wood year mushroom by soaking it in water, then cut into strips.
2. In a sauce pan, boil water and add the ingredients in the following order of shrimp, ground pork, wood ear mushroom, noodles. If you put the meat in a small colander (like the kind you use to dissolve miso for miso soup) it'll be easier to cook.
3. Toss Steps 1, 2, and A together. Garnish with cilantro or celery leaves and serve.
