Easy Oil and Sugar-free Banana Cake Made with the Microwave

Done in 5 minutes! This is a healthy, low-calorie banana cake containing no sugar, oil or dairy. It's great for people with allergies, or for when you are on a diet or don't feel so well. It's perfect for busy mornings, and good for baby food too.

Ingredients: 2-3 servings

Pancake mix
150 g
Eggs
2
Banana
3 medium (or 4 small)

Steps

1. Mix the eggs and peeled bananas in a blender.
2. Put the blended mixture in a bowl, and sift in the pancake mix. Fold it in with a spatula.
3. Pour the mixture into a mould until about 80% full. Cover it loosely with plastic wrap, leaving a gap between the mixture and plastic, and microwave on high for 1 minute.
4. Instead of pancake mix, you can use 150 g of cake flour and 1 1/2 teaspoons of baking powder. See Recipe ID: 575243.
5. You can add cocoa powder or milk if you'd like.

I wanted to make a simple and healthy oil- and dairy-free banana cake. I tried many variations in my quest to find a fluffy texture that was easy on the stomach. Great for busy mornings, when you are on a diet or when you don't feel so well. It makes good baby food too!
