Sour Pork Roast Made with Black Vinegar

You can make a decent dressing for sour pork without the same old taste of ketchup by using black vinegar. It really feels like you ate sour pork.

Ingredients: 4 people

•Pork shoulder roast
400 g
•Salt, pepper, Shaoxing wine for the meat rub
A small amount
★Katakuriko
as needed

Steps

1. Cut the meat as if making tonkatsu, cut shallow notches into one side, cut into large bite-sized pieces, and season with the salt, pepper, and Shaoxing wine.
