Home Recipe for Simmered Chicken Offal and Ovaries

This is a dish of simmered chicken motsu (offal) and ovaries. The sweet and spicy taste reminds me of my mother's cooking. It looks great, so it's good even for those who don't like offal!


Chicken motsu + ovaries
1 package (200 g)
◎Soy sauce

1 tablespoon
1 tablespoon
2 tablespoons
100 ml


1. Chicken motsu and ovaries come in a package like this.
2. Boil the chicken motsu and ovaries in water. Once it comes to a boil, simmer for 2-3 minutes. A lot of white scum will rise up, but that's okay.
3. Rinse in running water and cut the motsu into 2-3 cm lengths.
4. Heat the ◎ ingredients in a pot and add the motsu and ovaries.
5. Simmer while stirring occasionally. It's ready when the ovaries are shiny.
6. I like it to have a real deep teriyaki flavor, so I simmer until it looks like this.
