TGIF Chicken Karaage

Garlic-rich juicy chicken karaage. Even KFC fans will love these. You may hesitate to pack it in a bento since the garlic in it is pretty powerful!


Chicken thighs
1 teaspoon
● Soy sauce and sesame oil
2 tablespoons each
● Black pepper and five-spice powder
to taste (about 1/2 teaspoon each)
● Ginger
1 piece (grated)
☆ Salt
1/2 teaspoon (a must)
☆ Garlic
1 whole garlic (not one clove) to taste
☆ Katakuriko
5 to 6 tablespoons
☆ Eggs
2 (beaten)


1. Cut the chicken thighs into pieces about 50g each. Put into a plastic bag with the ● ingredients and rub over the bag. Marinate for 30 minutes to overnight.
2. Just before you fry the chicken, mix in the ☆ ingredients. It's pretty runny, but this is the coating.
3. Deep fry for 5 minutes at 175°C. Take out once and wrap in paper towels for 3 minutes to cook in residual heat.
4. Heat the oil up to 190°C, put the chicken back in and fry for 10 seconds to crisp the surface.
5. If you are using chicken breast meat, add 3 tablespoons of tempura flour with an equal amount of milk and a pinch of salt to make the coating even juicier.

Story Behind this Recipe

I love garlic, and I used to add 5 cloves worth of grated garlic to the karaage marinade, but this was much easier.
