Sweetly Aromatic Sweet Potatoes Stewed in Sesame Miso

The combination of miso and sesame is aromatic. A tasty simple stewed item that works either as a side dish or a snack.

Ingredients: 3 to 4 servings

Japanese sweet potato
1 large (300 to 400 g)
Sesame oil (or vegetable oil)
2 tablespoons
1 cup
Bonito dashi stock
1 teaspoon
2 tablespoons
1 tablespoon (seasoning) and 1 teaspoon (topping)
Toasted sesame seeds (white)
3 tablespoons


1. Chop the sweet potato into fairly large sized pieces. Rinse in water 4 to 5 times, and thoroughly drain excess water.
2. Heat the sesame oil in frying pan, and add the sweet potatoes and stir-fry for 3 to 4 minutes on medium heat. Once lightly browned, absorb excess oil with a paper towel.
3. Add dashi broth, sugar, and 1 tablespoon of miso seasoning.
4. Bring to a boil, then reduce to low heat, cover with a drop lid, and simmer for 10 to 12 minutes.
5. Add 1 teaspoon of miso and dissolve to add a finishing touch.
6. Coat in sesame seeds and serve.
