Cut-Out Cocoa Cookies with Rice Flour

Make cut-out cookies for Valentines Day.
Use a chocolate pen to decorate!

This is a one-bowl recipe.

Ingredients: Makes about 50 small

Cake flour
75 g
Rice flour (cake flour works too)
75 g
Unsweetened cocoa
30 g
Unsalted butter (brought to room temperature)
120 g
a pinch
Powdered sugar
100 g
Egg yolk


1. Sift the cake flour and combine with the dry ingredients. Use a whisk to beat the butter into a cream. Add a pinch of salt.
2. Add the dry ingredients in 3 batches. Use a hand mixer to mix well until fluffy. Add the egg yolk and continue to mix.
3. Use a rubber spatula to add the dry ingredients in 3 batches. Once it's well incorporated, flatten it out, wrap, and let sit in the refrigerator for 30 minutes.
4. Preheat the oven to 170ºC. Take the dough out of the refrigerator, roll out to 5 mm, and use cookie cutters to cut out shapes. Place on top of a baking sheet and bake at 170℃ for 12 to 15 minutes.
5. For Valentines Day.

Rice flour is pretty popular, and I had some left over, so I used it to make cookies.
