Simple Tofu No-Bake Cheesecake

You can eat this dessert even if you're trying to lose weight or on a macrobiotic diet. The lemon gives this cheesecake a lovely, tart kick. It's oil-free, egg-free, and contains zero dairy products.

Ingredients: 2 servings

Tofu
1/2 block
Lemon juice
2 tablespoons
Maple syrup
2 tablespoons
White miso
1 tablespoon
Toppings:
Strawberries, oranges etc.
as desired
Maple syrup
as desired

Steps

1. Drain the tofu for around 20 minutes. I used "Pecchin"'s method, shown in "How to Drain Tofu for Sloppy Housewives" (Recipe ID: 508276).
2. Mix the tofu, lemon juice, and maple syrup, together with a hand mixer (or in a food processor) until smooth.
3. You can use either silken or firm tofu for this recipe (firm tofu gives a denser dessert) but firm tofu does tend to go lumpy so blend it well.
4. Add the dessert to a glass or container and top with fruit. Chill in the refrigerator and serve. If you like sweeter desserts, try eating it with maple syrup.
