This egg salad is easy to make Just heat up for 1 minute in the microwave and mix! You can use it for making sandwiches or use it as a sauce for chicken or pork. Either way, I'm happy because it's so easy.
Put 1/2 teaspoon of vegetable oil in a heat-resistant bowl
Break an egg on top of the bowl and stick a bamboo skewer or tooth pick through the whole egg's yolk and egg white many times.
Cover it with a cellophane wrap and heat it up in a 500 W microwave for about 1 minute to 1 minute and 10 seconds.
If the egg has set it's done. Check how hard it is and adjust the cooking time accordingly.
Mash it with a fork likely to mince it.
Add about 1 tablespoon of mayonnaise, salt and pepper and mix it briefly.
Add chopped fresh parsley or dried parsley for finishing and mix the whole thing, then it is ready You can add black pepper instead too!
