Saikyo-Style Grilled Salmon

Perfect as a side dish with drinks. If you don't have Saikyo miso, substitute with regular miso. I added the ingredient amounts for regular miso.

Ingredients: 2 servings

Raw salmon
2 filets
Saikyo miso paste
100 g
2 tablespoons
1 tablespoon
※When using white miso or mixed miso, add 3~4 tablespoons mirin.


1. Pat dry the salmon with paper towels to remove excess moisture, combine miso, sugar, and sake, and coat the salmon (as shown).
2. Let sit for 2 to 4 days in the refrigerator to let the flavors absorb.
3. Rinse off the miso, pat dry the excess moisture with paper towels, grill on both sides until golden, and serve.
