Biscotti Cinnamon Apple

This is a crispy biscotti recipe. I added apple jam, cinnamon, maple syrup and walnuts to the dough with whole wheat flour.


Strong bread flour
120 g
Whole wheat flour
30 g

☆Maple syrup
30 g
☆Apple jam ( I used "Abracadabra ♪ Apple Jam" by P-ko mama, Recipe ID: 440371)

Baking powder
1 g
Milk (or 60 g yogurt and 10 g milk for crispier biscotti)
40 g
☆Vanilla oil
4 drops


1. Cream the butter, then add the sugar and mix.
2. Add the ingredients marked ☆ and mix them in. Add the milk and mix together.
3. Add the strong bread flour, whole wheat flour and baking powder, and mix. Fold in the chopped walnuts.
4. Shape the dough into a log. Bake in the oven preheated to 170℃ for 25 minutes.
5. When it has cooled a bit, cut into slices. (I cut it into about 7mm thick slices.) Place the slices on a baking tray.
6. Bake in the oven preheated to 160℃ for about 12 minutes. Flip the biscotti and bake the other side for about another 12 minutes.
7. Let them cool down on a rack etc. Put them in a container, and keep in the refrigerator.

I love the combination of cinnamon and apple, so I wanted to bake biscotti with that flavor.
