Oil-free Carrot Salad with Sesame Miso

This is so simple to make! The sesame compliments the soft grated carrots incredibly well. This recipe uses oil and egg-free macrobiotic mayonnaise.

Ingredients: 2 servings

Carrot
1 large (or 2 small)
Natural sea salt
a dash
Macrobiotic mayonnaise (Recipe ID: 710620)
White miso
1 tablespoon
White sesame paste
1 tablespoon
Vinegar
1 tablespoon

Steps

1. Wash the carrot, and if it's not organic, peel. Grate the carrot with a mandolin slicer or if using a knife, finely julienne.
2. Mix in a pinch of salt, leave to marinate for a few minutes, and then squeeze firmly to get rid of any moisture.
3. Make the macrobiotic mayonnaise, then mix with the grated carrots and transfer to a serving dish.
4. It's very easy to grate the carrot using a mandolin slicer. It grates the carrot into very fine pieces, which absorb the dressing really well.
