Tomato Bruschetta

Tomato Bruschetta

This is a great way to enjoy delicious tomatoes.

Ingredients: 2 servings

Basil leaves (dried is ok)
1 teaspoon
1/2 clove
Olive oil
2 tablespoons
Parmesan cheese
1 tablespoon
a pinch
Black pepper
a pinch
French baguette
Cream cheese


1. Make a cross cut (like an X) through the skins of the tomatoes. Place in a bowl with hot water for about 30 seconds.
2. Soak in cold water, and remove the skin. Cut into small pieces.
3. Mince the garlic and basil.
4. Mix all the ingredients, and let sit in the fridge for about 1 hour. The seasoning will settle into the tomatoes really well this way.
5. Spread butter on slices of baguette, and toast. Spread on some cream cheese, and top with the Step 4 mixture (which you had been chilling in the refrigerator).

Since lots of tomatoes were given to me, I tried to come up with an easy recipe that would let me use them up.
