Chocolate Cookies Crispy with Cornflakes

Chocolate Cookies Crispy with Cornflakes

Make it in a bowl. These cookies are easy to make since the recipe uses ready-made pancake mix. They have a lovely, crispy texture that lingers in your mouth.

Pancake mix
1 packet (200g)
Cocoa powder
☆Vegetable oil
▲Chocolate chips (chocolate bar)
to taste
▲Cornflakes (plain)

1. Line a baking tray with parchment paper. Preheat the oven to 350°F/180℃.
2. Put the ☆ ingredients in a bowl and mix until creamy. It's done when everything is mixed.
3. Add cocoa powder and mix.
4. Add pancake mix and mix with a spatula, cutting through the mixture.
5. Once it becomes crumbly, add the ▲ingredients, and squeeze into a dough.
6. Once the dough has formed, take a small amount, squeeze and toss between your hands as though you're playing catch. Shape into balls and flatten with your palms.
7. Bake the cookies in a preheated oven for about 20 minutes. The cookies are fragile when hot, so sacrifice one to check if they are done.
8. They are done!! Enjoy these crispy cookies.

Story Behind this Recipe

I occasionally buy cornflakes as a dietary supplement, but I never eat the whole packet, so I make these cookies with the leftovers. Try these crispy cookies!
