Homemade Tempura Batter

You can make crispy light restaurant quality tempura batter easily at home.


The amounts in [] are when you need just a little bit for your bento
● Cake flour
1 cup - 200 ml [1/4 cup - 50 ml]
● Katakuriko
2 tablespoons [1/2 tablespoon]
● Salt
2 pinches [a small amount]
▲ Water
150 ml [2 1/2 tablespoons]
▲ Vinegar
35 ml [1 1/2 teaspoons]
Cake flour
as needed
Ingredients to fry of your choice:
Vegetables, meat, fish, etc.
Oil for deep-frying
as needed


1. Put the ● ingredients in a bowl, and mix with a whisk. Combine the ▲ ingredients too.
2. Pour the ▲ ingredients into the bowl with the ● ingredients, and mix together lightly. You can stop while it's still floury!
3. Dust the ingredients you are frying lightly with cake flour. Dip in the batter, and fry in oil.
