Okara Sweets - Okara Kabocha Muffins

These are 100% okra muffins with kabocha made without oil or flour. Just add the ingredients and mix.

Ingredients: 5-6 muffins

Fresh okara
100 g
Kabocha squash with rind
100 g
40 g
Baking powder
1 teaspoon


1. Steam or microwave the pumpkin and mash roughly. Preheat the oven to 180°C.
2. Mix the pumpkin and okara well.
3. Beat the egg in a bowl, add the sugar, and then mix. Add Step 2 and the baking powder, then stir in.
4. Fill the muffin cups using a spoon. Bake for 25-30 minutes at 180°C.
5. User "✰caramel-cookie" made the batter using a hand mixer.
6. User "Sandy Sandy" made this with heavy cream. User "Uraran dx" made it with milk. They seem to go well with okara's moistness.

I wanted to eat okara muffins that don't use flour. I had mashed pumpkin for my infant child, so I added it in.
