English Style Chicken Salad

English Style Chicken Salad

Tender chicken with a mild sauce. It's very simple, but I heard it was one of Queen Elizabeth's favorites.

Ingredients: 3-4 servings

Chicken breast meat
250 g
♡ Lemon and dill seasoning (or Krazy Salt)
Enough to coat both sides of the chicken
♡ Salt
1/4 teaspoon per side (1/2 teaspoon total)
White wine
2 tablespoons
100 g
50 g
♥ Mayonnaise
1 tablespoon
♥ Curry powder
1/4 teaspoon
♥ Garlic (grated)
1/4 teaspoon
♥ Lemon juice
1/3 teaspoon
♥ Apricot jam
1 teaspoon
Salt and pepper
a small amount of each


1. Slice the onion and celery thinly. Mix the ingredients marked ♥ together.
2. Remove the skin from the chicken breast, and pierce the side of the breast meat that the skin was on with a fork several times.
3. Season both sides of the chicken with the ingredients marked ♡. Massage the salt in gently. Make sure to season the chicken well at this stage.
4. Put the seasoned chicken in a heatproof container skin side down. Cover with the sliced onion and celery and add the white wine.
5. Cover loosely with plastic wrap and microwave for 5 minutes at 500 W. When the juices run clear when you pierce the thickest part of the meat with a skewer, it's done.
6. Cut the chicken into bite-sized pieces. Wring out the onion and celery well. Put the chicken and vegetables in a bowl, combine with the ♥ ingredients, and adjust the seasoning with salt and pepper.
7. This is my favorite lemon and dill seasoning.
