These muffins are easy to make with pancake mix and are without eggs. All the moisture comes from the fruit. They are quick and easy muffins, which only requires mixing the ingredients and baking. The texture is fluffy and chewy.
<Preparation> Melt the margarine in the microwave. Preheat the oven for 180℃.
Mash the banana with a fork. When it's mostly mashed, you can stop.
Add the grated apple. I grated it over the bowl. Then mix in.
Add the pancake mix, and fold in. Briefly mix without kneading.
Add the melted margarine, and mix without kneading, then the mixture is ready.
Pour into the muffin cups, and bake in the oven for 25 ~ 30 minutes. I used 7 cups this time. Fill about 60% full.
And done. These muffins are full of sweet and tart apple and banana flavor.
Story Behind this Recipe
I created this recipe because I wanted to make an easy cake using an over ripen banana and an apple, which was given to me as a gift.
If you can mix the mixture without kneading, the rest is easy. I used melted margarine this time, but you could use vegetable oil or melted butter as well. Use whichever you like. When you are using vegetable oil, use 25 g instead of 30 g.
