My Mother's Easy Madeleines

This is a very easy madeleine recipe passed down by my mother using a few tools and ingredients.

Ingredients: 10 in a madeleine pan

Cake flour
100 g
Baking powder
1/3 teaspoon
Sugar
80-100 g
Eggs
2
Margarine (unsalted or salted)
100 g
Lemon juice
1 teaspoon
Vanilla extract (or Vanilla oil)
as needed

Steps

1. Sift the cake flour and baking powder twice in a bowl. Add the sugar (I used brown sugar in the picture) and mix briefly with a whisk.
2. Break the eggs brought to room temperature, and briefly mix with the whisk.
3. Melt the margarine (microwave for about 30 seconds at 600 W). Add the margarine, and lemon juice into the bowl, and mix until the batter becomes glossy.
4. Pour in the butter greased mold and bake in the oven preheated to 180℃ for 15 minutes (the baking time differs on your oven).
